Characteristics:
Medium-bodied Pinot Noir with fine tannins and balanced acidity. Rich aromas and flavours of red cherry, nutmeg, raspberry and toffee. Long, clean and cherry finish. The grapes grow in Monterey County, influenced by cool breezes from the Monterey Bay. 5 months on French oak.
Food pairing:
Elegant pinot, serve with roast chicken or pigeon. Rack of lamb, served pink or carpaccio. Go for roast pork with herbs and fennel or chicken sausages or sweetbreads. Dishes with morels and other wild mushrooms or mushroom risotto. Roast or grillled lobster.
